Cheese Topped Stuffed Peppers

- 6 green bell peppers, tops removed and seeded
- 1 lb. lean ground beef
- 1 small onion, chopped
- 1 c. cooked rice
- 1 tsp. salt
- 1 (15 oz.) can tomato sauce, divided
- 6 oz. Mozzarella cheese, shredded
Directions

1In large kettle of boiling water, parboil peppers for 5 minutes and drain.

2In a medium skillet, cook beef and onion until browned.

3Drain off excess fat; add rice, salt and 1 cup tomato sauce, heating thoroughly.

4Heat oven to 350°.

5Stuff each pepper with beef mixture and place in ungreased baking dish large enough to contain peppers.

6Pour remaining tomato sauce over peppers and cover with foil.

7Bake 45 minutes. Remove foil and bake 15 minutes.

8Sprinkle with shredded cheese.

9Serve.
