Cheese Topped Stuffed Peppers

  • 6 green bell peppers, tops removed and seeded
  • 1 lb. lean ground beef
  • 1 small onion, chopped
  • 1 c. cooked rice
  • 1 tsp. salt
  • 1 (15 oz.) can tomato sauce, divided
  • 6 oz. Mozzarella cheese, shredded

Directions

    In large kettle of boiling water, parboil peppers for 5 minutes and drain.

    In a medium skillet, cook beef and onion until browned.

    Drain off excess fat; add rice, salt and 1 cup tomato sauce, heating thoroughly.

    Heat oven to 350°.

    Stuff each pepper with beef mixture and place in ungreased baking dish large enough to contain peppers.

    Pour remaining tomato sauce over peppers and cover with foil.

    Bake 45 minutes. Remove foil and bake 15 minutes.

    Sprinkle with shredded cheese.

    Serve.
