Cheese Vegetable Casserole

Ingredients

  • 1 pkg. frozen mixed vegetables
  • 1/2 c. finely chopped celery
  • 1/2 c. finely chopped onion
  • 1/2 c. Hellmann's mayonnaise
  • 1/3 c. cubed Velveeta cheese
  • 1 c. crushed Ritz crackers
  • 1/3 c. grated Parmesan cheese

Directions

    Cook vegetables as directed and drain well.

    Add the celery, onion, cheese, mayo and salt and pepper to taste.

    Spoon the mixture into a greased 2-quart casserole dish.

    Sprinkle with the Parmesan cheese.

    Bake for 30 minutes at 300°.

    Top with crushed crackers and bake an additional 10 minutes.
