- 1 pound Cheddar Cheese, shredded
- 1 cup Mayonnaise
- 1/2 cup onion, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground red cayenne pepper
- 1 cup pecans, chopped & toasted
- 12 ounces strawberry jam
Directions

1Beat first 6 ingredients at medium speed with an electric mixer until blended; stir in the toasted pecans. Shape mixture into a volcano shape, or spoon into a 5 cup mold. Cover and chill 8 hours. Spoon preserves into/over the cheese. Serve immediately with crackers or toasts
