  • 1 c. all-purpose flour
  • 1/2 c. yellow corn meal
  • 1/2 tsp. chili powder
  • 1/4 c. margarine, melted
  • 1/4 c. milk
  • 1 large egg
  • 1 1/2 c. sharp Cheddar cheese, shredded
  • 1 (4 oz.) can green chilies
  • 1/4 c. green onions, chopped fine

Directions

    In a bowl, mix flour, corn meal and chili powder.

    Add butter, milk and egg.

    Stir until just moistened.

    Press mixture into nine-inch square pan.

    Bake at 350° until mixture is lightly browned and begins to pull away from sides of pan (about 25 minutes).

    Mix cheese, chilies and green onions; spread over hot mixture.

    Return to oven and bake until cheese melts (about 15 to 20 minutes).

    Serve either hot or cold.
