  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1 medium carrot, peeled and coarsely grated
  • 2 garlic cloves, minced
  • 1 12 lbs ground sirloin
  • 12 teaspoon salt
  • 14 teaspoon fresh ground black pepper
  • 14 cup ketchup
  • 2 tablespoons yellow mustard
  • 2 medium potatoes, peeled and chopped
  • 2 (14 ounce) cans beef broth
  • 1 (10 3/4 ounce) can condensed cheddar cheese soup
  • 12 cup shredded sharp cheddar cheese

    Heat oil in large pot over medium heat.

    Add onion and carrot and cook for 5 minutes.

    Add garlic and cook another minute.

    Add beef, salt, and pepper and cook for 6-8 minutes, or until brown.

    Drain any fat.

    Stir in ketchup, mustard, and potatoes and cook 3 minutes.

    Add beef broth.

    Bring to a boil, then simmer about 10 minutes.
