- 1/2 c. raisins
- 3 Tbsp. flour, divided
- 1/4 tsp. salt
- 5 eggs, separated
- 3 (8 oz.) pkg. cream cheese, softened
- 1 c. sugar
- 1 Tbsp. grated lemon peel
Directions

1Soak raisins in hot water for 15 minutes.

2Pat dry and coat with 2 tablespoons of flour.

3Set aside.

4Preheat oven to 350°. Beat the egg whites and salt until stiff.

5Place the egg white mixture in the freezer for 5 minutes.

6Combine the cheese, sugar, egg yolks and remaining flour; beat until smooth.

7Stir in the raisins and lemon peel.

8Carefully fold in the egg whites.

9Pour the mixture into a greased and floured 9-inch spring-form pan. Bake for 45 minutes, then turn the oven off and leave the cake in the oven until it cools.
