  • 2 (8 oz.) pkg. cream cheese, softened
  • 1/2 c. sugar
  • 1 Tbsp. lemon juice
  • 1 tsp. lemon peel, grated
  • 1/2 tsp. vanilla
  • 2 eggs, separated (whites beaten stiff; reserve 3 Tbsp. for crust)

Directions

    Combine cream cheese, sugar, lemon juice, peel and vanilla until well blended.

    Add yolks, one at a time, mixing well after each one.

    Fold in stiffly beaten egg whites.
