- 4 oz. oatmeal cookies (six to eight 3-inch cookies)
- 2 Tbsp. melted butter or margarine
- 2 c. part skim Ricotta or low-fat cottage cheese
- 2 egg whites
- 1 tsp. vanilla
- 1/4 tsp. almond extract
- 3 Tbsp. light honey
- fresh fruit to garnish (tangerines, kiwi sections or berries)
Directions

1Lightly grease a 9-inch tart pan.

2In blender, process cookies and butter until crumbly.

3Press in pan, then refrigerate.

4Blend cheese, eggs, vanilla, almond extract and honey in blender.

5Spoon filling into tart shell.

6Bake until firm, 30 minutes, at 350°. Garnish with fruit before serving.
