- 4 slices bacon
- 1/4 c. sour cream
- 1 Tbsp. sliced green onion
- 1 tsp. prepared horseradish
- 8 potato skins
- 1/2 c. shredded Cheddar cheese
Directions

1Layer 3 paper towels on a plate.

2Arrange bacon slices on paper towels, and cover with another paper towel.

3Microwave on High for 3 to 6 minutes.

4Cool and crumble.

5Set aside.

6In small bowl, combine sour cream, onion and horseradish.

7Mix well.

8Divide mixture into 8 equal portions.

9Spread 1 portion onto each potato skins.

10Sprinkle with bacon crumbs and cheese.

11Microwave on Medium for 3 1/2 to 7 minutes.

12Serve with additional sour cream if desired.
