Cheesy Corn Bread *

- 1/2 c. butter, room temperature
- 1/2 c. sugar
- 4 eggs
- 1 lb. can creamed corn
- 1/2 c. grated Monterey Jack cheese with jalapeno peppers
- 1/2 c. grated mild Cheddar cheese
- 1 c. sifted flour
- 1 c. yellow cornmeal
- 4 tsp. baking powder
- 1/4 tsp. salt
Directions

1Preheat oven to 350°.

2Grease and flour 9 x 13 x 2-inch baking pan.

3Cream 1/2 cup butter with sugar in bowl until light and fluffy.

4Beat in eggs, one at a time.

5Mix in corn and cheeses. Sift together dry ingredients and add to corn mixture; blend well. Pour batter in pan; put in oven and reduce oven temperature to 300°.

6Bake bread until golden brown and begins to pull away from sides of pan, about 55 minutes.
