  • 8 to 10 cooked, cubed Irish potatoes
  • 1/2 lb. Velveeta cheese, cubed
  • parsley to taste
  • 1 small jar pimento, diced and drained
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1/4 lb. butter or oleo, melted
  • 3/4 c. milk
  • salt and pepper to taste

Directions

    Mix all ingredients together in a large greased casserole. Bake for 1 hour at 350°.

    Cook, covered, until the last 15 minutes. Stir occasionally. Serves 10 to 12 people.
