- 8 to 10 cooked, cubed Irish potatoes
- 1/2 lb. Velveeta cheese, cubed
- parsley to taste
- 1 small jar pimento, diced and drained
- 1 onion, diced
- 1 bell pepper, diced
- 1/4 lb. butter or oleo, melted
- 3/4 c. milk
- salt and pepper to taste
Directions

1Mix all ingredients together in a large greased casserole. Bake for 1 hour at 350°.

2Cook, covered, until the last 15 minutes. Stir occasionally. Serves 10 to 12 people.
