Cheesy Mashed Potatoes

  • 8 servings instant mashed potatoes
  • 1/2 c. butter or margarine, softened
  • 2 pkg. (3 oz. each) cream cheese, softened
  • 1/2 c. Parmesan cheese, grated
  • 1/2 c. Cheddar cheese, shredded
  • 1/4 c. scallions, chopped

Directions

    Prepare mashed potatoes according to package directions, omitting butter.

    Turn into casserole.

    Add butter and cheese and beat until well blended.

    Add scallions and mix well.

    Refrigerate for several hours for flavors to blend.

    If desired, sprinkle Cheddar cheese on top before baking.

    Bake at 350° for 1 hour.

    If casserole is not refrigerated, bake for only 30 minutes.
