- 1 1/2 c. self-rising cornmeal
- 3 eggs
- 1 c. buttermilk
- 1/2 to 1 c. chopped jalapenos
- 1 tsp. salt
- 1 c. cream-style corn
- 2/3 c. cooking oil
- 1 c. grated cheese
Directions

1Preheat oven to 375 degrees.

2Grease and flour a 9 X 13 inch pan.

3In a medium bowl, mix cornmeal, eggs, buttermilk, jalapenos, salt, corn and oil; blend together well.

4Pour half the batter into pan.

5Sprinkle with cheese; add remaining batter.

6Bake 45 minutes.

7Cool 5 minutes before cutting and serving.
