- 1/2 lb. pepperoni (unsliced)
- 1 c. flour
- 1 c. yellow cornmeal
- 4 tsp. baking powder
- 1/4 tsp. salt
- 1/8 tsp. ground red pepper
- 2 eggs, slightly beaten
- 1 c. milk
- 1/4 c. vegetable oil
- 1/2 c. shredded Monterey Jack cheese
- 1/4 c. drained diced green chilies
Directions

1Preheat oven to 400°.

2Cut five 1/8-inch thick slices from pepperoni; cut each slice into 8 wedges.

3Set aside.

4Cut remaining pepperoni into 1/4-inch cubes.

5Combine flour, cornmeal, baking powder, salt and pepper in large mixing bowl.

6Combine eggs, milk and oil in small bowl; add to flour mixture, stirring just until dry ingredients are moistened.

7Fold in cheese, chilies and cubed pepperoni.

8Spoon batter into greased mini-muffin cups, filling each almost to top.

9Top each muffin with 1 wedge of reserved pepperoni, pressing halfway into batter.

10Bake 10 to 12 minutes or until golden brown.

11Remove from pans immediately and serve warm or at room temperature.
