Cheesy Potato Bake

  • 1 onion, chopped
  • 7 or 8 medium potatoes
  • 1/4 c. melted butter
  • 8 oz. sour cream
  • 1 can cream of chicken soup (undiluted)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 can mushroom pieces, drained
  • 2 c. grated cheese
  • 1 c. Pepperidge Farm herb stuffing
  • 3 Tbsp. butter, melted

    Peel potatoes and cut into 1/4-inch strips. Cover with water and cook until crisp-tender. Drain and set aside. Combine 1/4 cup butter, sour cream, soup, onion, salt, pepper and mushrooms in large bowl. Mix well. Add potatoes and cheese. Stir gently. Pour into a greased oblong Pyrex dish. Mix 3 tablespoons butter and stuffing. Sprinkle on top. Bake 30 minutes at 350° until bubbly.
