Ingredients

  • 2 baking potatoes, peeled & cubed
  • 1 can sweet corn
  • 1 cup shredded cheddar cheese
  • 3/4 cup gluten-free baking mix (you can use reg baking mix)
  • 1 3/4 cup soy milk (or milk of your choice)
  • 2 eggs
  • 3/4 tsp salt
  • 1/2 tsp Italian seasoning
  • 1 /8 tsp ground black pepper

Directions

    Mix all ingredients together.

    Pour into greased baking dish.

    Bake @ 350F for 45 minutes to 1 hour or until a fork can easily be inserted into the potatoes.

    Let cool for 5 minutes before serving.
