- 2 baking potatoes, peeled & cubed
- 1 can sweet corn
- 1 cup shredded cheddar cheese
- 3/4 cup gluten-free baking mix (you can use reg baking mix)
- 1 3/4 cup soy milk (or milk of your choice)
- 2 eggs
- 3/4 tsp salt
- 1/2 tsp Italian seasoning
- 1 /8 tsp ground black pepper
Directions

1Mix all ingredients together.

2Pour into greased baking dish.

3Bake @ 350F for 45 minutes to 1 hour or until a fork can easily be inserted into the potatoes.

4Let cool for 5 minutes before serving.
