- 12 cup flour
- 12 teaspoon salt
- 12 teaspoon baking powder
- 1 large egg, beaten slightly
- 12 evaporated milk
- 14 lb spring greens, chopped
- 5 ounces grated mozzarella cheese
- 1 tablespoon pine nuts
- grated parmesan cheese
- cayenne pepper (optional)
Directions

1Preheat over to 350F.

2Spray 7x11 pan or 9-inch square baking dish.

3Whisk flour, salt, baking powder in small bowl.

4In medium bowl, mix egg and milk.

5Add to dry ingredients and blend well.

6Stir in cheese and greens; mix until greens are coated in batter.

7Pour batter into a greased baking dish.

8Sprinkle pine nuts around top of batter.

9Press lightly.

10Then, sprinkle parmesan cheese and pepper (optional).

11Bake 20-25 minutes or until lightly browned.

12Cut into bars when cooled.
