- 1 lb red potatoes, cut into chunks
- 1 cup cauliflower floret
- 14 cup sour cream
- 1 cup cheddar cheese, light, shredded
Directions

1Place potatoes and cauliflower in large saucepan.

2Add enough water to cover.

3Bring to a boil on high heat.

4Reduce heat to medium and simmer 20 minutes or until vegetables are tender.

7Add sour cream, mash until vegetable mixture is light and fluffy.
