  • 1 lb red potatoes, cut into chunks
  • 1 cup cauliflower floret
  • 14 cup sour cream
  • 1 cup cheddar cheese, light, shredded

    Place potatoes and cauliflower in large saucepan.

    Add enough water to cover.

    Bring to a boil on high heat.

    Reduce heat to medium and simmer 20 minutes or until vegetables are tender.
