Cheesy Tortilla Corn

Ingredients

  • 1/2 c. sliced green onions
  • 1/2 c. chopped red pepper
  • 1/4 c. (1/2 stick) margarine, divided
  • 2 pkg. (10 oz. each) sweet corn, thawed and drained
  • 1/2 lb. Velveeta process cheese spread, cubed
  • 2/3 c. crushed tortilla chips
  • 1/2 tsp. Mexican seasoning (optional)
  • 2 Tbsp. chopped cilantro

Directions

    Cook and stir onion and red pepper in 2 tablespoons of the margarine in large skillet over medium-high heat until tender. Reduce heat to low.

    Stir in corn and Velveeta cheese.

    Cook 5 to 7 minutes or until Velveeta is melted and mixture is thoroughly heated, stirring occasionally.

    Melt remaining 2 tablespoons margarine in separate pan.

    Stir in tortilla chips and seasoning. Cook over medium heat 3 minutes.

    Stir in cilantro.
