Cheesy Vegetable Casserole

  • 2 (10 oz.) pkg. frozen mixed vegetables
  • 1 c. chopped celery
  • 1/3 c. chopped onion
  • 1 c. mayonnaise
  • 1/2 c. (4 oz.) shredded sharp Cheddar cheese
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 c. bite size Cheddar cheese crackers, crushed
  • 1/4 c. butter or margarine, melted
  • 1/2 c. (4 oz.) shredded sharp Cheddar cheese

Directions

    Cook frozen vegetables according to package directions.

    Drain well.

    Combine cooked vegetables, celery, onion, mayonnaise, 1/2 cup cheese, salt and pepper.

    Spoon into a greased 2-quart casserole.

    Combine remaining ingredients and sprinkle over top. Bake at 300° for 30 to 40 minutes.
