  • 3 cloves Garlic
  • 2 teaspoons Ground Cumin
  • 1 pinch Saffron
  • 4 Tablespoons Olive Oil
  • 1 whole Lemon, Juiced
  • 1 whole Red Chili Pepper
  • 1 teaspoon Sea Salt
  • 1 bunch Fresh Coriander

Directions

    1. Grind the garlic, cumin, saffron, olive oil, juice of 1 lemon, chilli pepper and salt to a fine paste in a mortar and pestle. You can also do this in a food processor.

    2. Add the chopped coriander and mix well.

    Use as a marinade for fish, vegetables and meat dishes.
