  • 2 c. cornmeal
  • 1 1/2 c. flour
  • 3 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 c. buttermilk
  • 1 c. water
  • 1 egg
  • 1 c. cooked pinto beans
  • 1/2 c. chopped ham, fried
  • small pinch of baking soda

Directions

    Mix all dry ingredients in a large bowl. Add milk, water and egg. Beat until mixed well. Add beans and ham just until mixed. Pour into well-greased heavy skillet or pan.

    Bake at 350° for about 40 minutes. Top should be slightly browned.
