Ingredients

  • 1/2 stick butter
  • 3 Tbsp. granulated sugar
  • 1 Tbsp. brown sugar
  • 1 cinnamon stick and 1/4 tsp. cinnamon
  • 1 Tbsp. orange peel (zest)
  • 1 (16 oz.) can pitted cherries (in syrup)
  • juice of 1 orange
  • juice of 1 lime
  • 3 Tbsp. cornstarch
  • 4 whole cloves
  • 1 to 2 oz. brandy
  • 1 qt. vanilla ice cream

Directions

    In a large, heavy skillet, melt butter.

    Add sugars, cinnamon, zest and cloves.

    Separate cherry juice and add cherries to pan. Heat 2 minutes, stirring constantly.

    Add orange and lime juice and stir.

    Add cherry juice and dissolved cornstarch.

    Heat until thick.

    Insert cloves into horseneck orange at intervals.

    Heat brandy in ladle (if using gas stove) or in small pan (if using electric stove).

    Flame and pour into pan.

    Stir and serve over vanilla ice cream.
