Cherry-Banana Bread

- 1/2 c. butter or margarine
- 3/4 c. sugar
- 2 eggs
- 2 c. unsifted all-purpose flour
- 3 tsp. baking powder
- 1/2 tsp. salt (optional)
- 1/4 tsp. ground nutmeg
- 1 c. mashed bananas (3 medium)
- 1 c. dried cherries (see note)
Directions

1In a large mixing bowl, with electric mixer, combine butter and sugar until light and fluffy.

2Add eggs, one at a time, beating well after each addition.

3Combine flour, baking powder, salt and nutmeg; add flour mixture and bananas alternately to butter mixture, mixing just until ingredients are moistened.

4Do not overmix.

5Fold in dried cherries.

6Pour batter into a greased 9 x 5 x 3-inch loaf pan.

7Bake in preheated 350° oven for 50 to 60 minutes.

8Best served the day after baking.
