- 3/4 c. white sugar
- 2 eggs
- 1 Tbsp. lemon juice
- 1 tsp. vanilla
Directions

1Line medium muffin paper cups with a vanilla wafer in each bottom of a cup.

2Combine ingredients and beat until light and fluffy.

3Fill cups 2/3 full of cheese mixture.

4Bake at 375° for 15 or 20 minutes.

5Chill and then top before serving with any fruit mixture for pies.
