- 1 (15 oz) can pitted black cherries, drained, juice reserved
- 1 cup granulated sugar
- 1 None vanilla bean, split
- 1 None lemon, zested and juiced
Directions

1Combine cherry juice, sugar, vanilla bean, 1/2 tsp lemon zest and 1 tbsp lemon juice in a saucepan over low heat, stirring, until sugar dissolves. Add cherries and bring to a boil. Cook, uncovered, for 7 mins, or until mixture thickens and coats the back of a spoon.
