Cherry Crêpe Cake

  • 1 1/4 cups heavy cream
  • 1 tbsp powdered sugar, sifted
  • 1 tsp vanilla extract
  • 9 oz smooth ricotta cheese
  • 8 None store-bought crepes
  • 1 1/4 cups black cherry jam
  • 4 oz frozen pitted cherries, thawed

Directions

    Whip heavy cream, powdered sugar and vanilla to firm peaks. Fold into ricotta.

    Place 1 crepe on a serving plate. Spread 1 tbsp jam over crepe then top with 1/3 cup ricotta cream. Repeat layering with remaining crepes, jam and ricotta cream, ending with ricotta mixture. Top with cherries.

    Serve.
