Cherry Jam And Ricotta With Scones

- 1 lb pitted cherries
- 2 1/2 cups preserving sugar
- 2 tbsp lemon juice
- 1 1/3 lbs fresh ricotta
- 2 tbsp powdered sugar, sifted
- 1/2 tsp ground cinnamon
- 12 None store-bought scones, heated
Directions

1Place cherries, sugar and juice in a large heavy-based saucepan over moderate heat. Cook and stir until sugar dissolves. Increase heat to moderately high. Simmer, stirring occasionally, for 25 minutes or until jam reaches setting point. Remove pan from heat. Transfer hot jam to hot sterilized jars. Seal while hot. Cool.

2Combine ricotta, powdered sugar and cinnamon in a medium bowl.

3Spread split scones with ricotta mixture and top with cherry jam. Serve.
