- 2 c. flour
- 1/3 c. plus 3 Tbsp. sugar
- 1/3 c. quartered cherries
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 3/4 c. milk
- 1/4 c. vegetable oil
- 1/4 c. cherry juice
- 1 egg, beaten
- 1 tsp. almond extract
- 1/4 c. finely chopped almonds
Directions

1Preheat oven to 350°.

2Grease muffin pan.

3In large bowl, combine flour, 1/3 cup sugar, cherries, baking powder and salt. In separate bowl, mix milk, oil, cherry juice, egg and almond extract.

4Make a well in the center of dry ingredients and pour in liquid.

5Stir.

6Spoon into tins 2/3 full.

7Sprinkle on remaining sugar.

8Bake 25 to 30 minutes.

9Cool for 10 minutes.

10Yields 1 dozen large muffins.
