- 4 c. tart cherries
- 3 Tbsp. Minute tapioca
- 1 1/3 c. sugar
- 1/4 tsp. almond extract
- 1 Tbsp. butter
Directions

1Preheat oven to 450°.

2Mix fruit, sugar, tapioca and almond extract in a bowl.

3Fill pastry-lined 9-inch pie plate with fruit mixture.

4Dot with 1 tablespoon of butter.

5Cover pie with top crust.

6Seal and flute edge.

7Cut several slits to permit steam to escape.

8Bake in a 450° oven for 10 minutes only.

9Reduce heat to 350° and bake 40 minutes longer.

10Cool.
