  • 4 c. tart cherries
  • 3 Tbsp. Minute tapioca
  • 1 1/3 c. sugar
  • 1/4 tsp. almond extract
  • 1 Tbsp. butter

Directions

    Preheat oven to 450°.

    Mix fruit, sugar, tapioca and almond extract in a bowl.

    Fill pastry-lined 9-inch pie plate with fruit mixture.

    Dot with 1 tablespoon of butter.

    Cover pie with top crust.

    Seal and flute edge.

    Cut several slits to permit steam to escape.

    Bake in a 450° oven for 10 minutes only.

    Reduce heat to 350° and bake 40 minutes longer.
