  • 1 1/4 c. sugar
  • 1 1/8 Tbsp. almond extract
  • 1 1/4 Tbsp. butter
  • 2 (16 oz.) cans tart cherries
  • 2 2/3 Tbsp. quick cooking tapioca
  • 2 Tbsp. shredded lemon peel

Directions

    Line 9-inch pie pan with 1/2 pastry.

    Save remaining and refrigerate both while making filling.

    Put pitted cherries in bowl and toss thoroughly with tapioca sugar and lemon juice and almond extract.

    Let stand for 10 minutes and pour into unbaked shell.

    Dot with butter.

    Cover with top crust and seal edges. Bake in preheated oven for 10 minutes at 450°.

    Reduce heat to 350°

    and continue baking for 40 minutes more.
