- 1 1/4 c. sugar
- 1 1/8 Tbsp. almond extract
- 1 1/4 Tbsp. butter
- 2 (16 oz.) cans tart cherries
- 2 2/3 Tbsp. quick cooking tapioca
- 2 Tbsp. shredded lemon peel
Directions

1Line 9-inch pie pan with 1/2 pastry.

2Save remaining and refrigerate both while making filling.

3Put pitted cherries in bowl and toss thoroughly with tapioca sugar and lemon juice and almond extract.

4Let stand for 10 minutes and pour into unbaked shell.

5Dot with butter.

6Cover with top crust and seal edges. Bake in preheated oven for 10 minutes at 450°.

7Reduce heat to 350°

8and continue baking for 40 minutes more.
