- 2 (16 oz.) cans pitted tart cherries
- 1 c. sugar
- 3 Tbsp. cornstarch
- 1 Tbsp. butter
- 1/2 tsp. almond extract
- 1 or 2 drops red food coloring
- 2 pie crusts
Directions

1Drain cherries; reserve 3/4 cup juice.

2Combine sugar, cornstarch and a dash of salt in a saucepan.

3Stir in reserved juice from cherries. Cook over medium heat, stirring constantly, until mixture thickens and boils.

4Add cherries, butter, almond extract and red food coloring.

5Pour into prepared pie crust. Cover with top crust; trim and flute edges.

6Cut several steam vents near center of pie.

7Bake at 425° for about 40 minutes.
