- 1 (1 lb. 4 oz.) can pitted tart red cherries (water packed)
- 1/2 c. sugar
- 2 Tbsp. quick cooking tapioca
- 2 egg whites
- 1/4 tsp. cream of tartar
- 1/3 c. sugar
- 3 c. sugar
- 2 egg yolks
- 1/3 c. sifted cake flour
Directions

1Drain cherries, reserving 1/2 cup liquid.

2Chop cherries.

3Add liquid, 1/2 cup sugar and tapioca.

4Cook, stirring constantly, until thick and bubbly.

5Beat egg whites, dash of salt and cream of tartar to soft peaks.

6Gradually add 1/3 cup sugar.

7Beat to stiff peaks.

8Beat egg yolks until thick and lemon color.

9Fold yolks into whites.

10Sift flour over and pour cherry mixture into 8 x 8 x 2-inch baking dish.

11Pour batter over.

12Bake at 325° for 30 minutes.

13Serve warm with ice cream.
