- 1 c. sugar
- 3 Tbsp. cornstarch
- 2/3 c. lemon juice
- 6 large eggs
- 5 Tbsp. butter or margarine, melted
- 1 Tbsp. grated lemon rind
- 1 unbaked 9-inch pie shell
Directions

1Heat oven to 325°.

2In large bowl, combine sugar and cornstarch with wire whisk; beat in eggs, one at a time, until well blended.

3Stir in lemon juice, butter and lemon rind until well mixed.

4Pour mixture into pie shell.

5Place filled pie on rimmed baking sheet.

6Bake 50 minutes or until golden and a thin knife inserted into pie about 1 inch from edge comes out clean. Cool on wire rack.

7Serve warm or refrigerate and serve cold.
