  • 1 vanilla pod
  • 3 3/4 cups sugar
  • 20 ounces water

    Boil frozen chestnuts in a large amount of water for 15 minutes.

    Drain and finely grind in the blender or food processor.

    Then, to get a really fine texture, pass the puree through a sieve.

    Pour the sugar and water into a large cooking pot and cook over high heat until large bubbles cover the surface.
