Chia Pudding Parfait

  • 1 1/2 cups almond milk
  • 1 tablespoon maple syrup
  • 3 teaspoons chia seeds
  • 1 tablespoon shredded coconut
  • 1 teaspoon ginger shredded
  • 1 frozen banana
  • 1 cup frozen strawberries

Directions

    Place 1 cup almond milk, chia seeds, maple syrup and coconut in a mason jar, shake and stir very well for 1 minute.

    Let sit for 2 minutes, then shake again for 30 seconds. Leave in fridge for 30 minutes

    Meanwhile, place ginger, banana, strawberries, and 1/2 cup almond milk into a high speed blender and blend until smooth.

    Layer chia seed pudding on the bottom of the jar, add a layer of strawberry parfait, and then add a layer of granola. Continue to add layers until you run out of space or ingredients.
