- 1 lb. medium shrimp
- 1/4 lb. butter
- 1 1/2 c. soft breadcrumbs
- 2 Tbsp. finely chopped onion
- 2 cloves garlic, minced
- 2 Tbsp. parsley
- 1/2 tsp. salt
- 1/4 tsp. tarragon
- 2 Tbsp. sherry
Directions

1Cook, peel and devein shrimp.

2Cut each in half lengthwise. Overlap the cut shrimp in an au gratin dish.

3Mix butter, onion, garlic, parsley, salt, tarragon and sherry in a saucepan and heat thoroughly.

4Pour over the shrimp; top with crumbs and broil until browned.

5Serves 3 or 4.
