  • 3 cups peanut oil
  • 1 egg
  • 1 cup milk
  • 1 cup flour
  • 2 1/2 teaspoons powdered sugar
  • 1/2 teaspoon pepper
  • 2 tablespoons salt
  • 2 boneless, skinless chicken breasts

Directions

    Mix together the egg and milk.

    Cut up chicken breasts into cubes.

    Place the chicken into the milk and egg mixture, and let sit for at least an hour in the refrigerator.

    While you are waiting for the chicken, mix together the flour, sugar, pepper, and salt.

    Remove from the refrigerator and dredge in the flour.

    Place peanut oil in a deep fat fryer, and bring up to a high heat.

    Once up to 375 F gently drop the chicken into the oil, and cook until golden brown.

    drain on paper towels.

    Serve with barbecue sauce.
