- 1 whole chicken, cleaned and cut into desired sizes (about 3 lb.)
- 1/2 c. soy sauce
- 1/2 c. vinegar
- 1 head garlic, peeled and crushed
- 1/2 tsp. black ground pepper
- 2 bay leaves
- 1 tsp. sugar
Directions

1Clean chicken and cut into desired serving size.

2Let it drain to remove excess water for about 15 minutes.

3Saute garlic in fat trimmings from the chicken until golden brown.

4Add black pepper and bay leaves.

5Add vinegar, soy sauce and sugar.

6Add chicken and let simmer for 20 minutes.

7Add 1/2 cup water if chicken is not yet tender.

8Boil for another 15 minutes.

9Serve with steamed rice with fried bananas on the side.
