- 6 flour tortillas
- 1 (1 1/4 ounce) packet taco seasoning mix, divided
- 1 lb boneless skinless chicken breast, cut into 1/2 ' strips
- 12 cup water
- 2 cups chopped tomatoes, divided
- 2 cups shredded cheddar cheese, divided
- 6 tablespoons sour cream
- 14 cup chopped fresh cilantro
Directions

1Preheat oven to 400 deg.

2Place tortillas in a single layer on a large baking sheet.

3Spray tortillas with cooking spray; sprinkle with 1 teaspoons of taco seasoning.

4Bake 7-8 minutes or until crisp and golden brown.

5Mix chicken, remaining seasoning mix and water in a large skillet.

6Bring to boil on medium-high heat.

7Reduce heat to medium- low; simmer 5 minute or until chicken is done, stirring occasionally.

8Add 1 1/2 cups of the tomatoes and cook until heated through, stirring occasionally.

9Remove from heat and stir in 1 1/2 cups of cheese.

10Spoon chicken mixture evenly over tortillas.

11Top with the rest of the cheese and tomatoes, the sour cream and cilantro.
