Ingredients

  • 1 (2 lb.) hen
  • 1 c. onion, chopped
  • 1 c. celery, chopped
  • 1 stick oleo
  • 2 c. broth
  • 4 c. corn meal
  • 1 1/2 c. flour
  • 3 tsp. baking powder
  • 2 tsp. salt
  • 1 Tbsp. sugar
  • 10 eggs
  • 3 c. buttermilk
  • 1 can celery soup
  • 1 can cream of chicken soup

    Boil hen and put broth aside.

    Boil onion and celery in broth with oleo until tender. To make bread, combine corn meal, flour, baking powder, salt and sugar. Add 4 eggs and buttermilk.

    Beat well. Bake bread mixture at 375° until done. Add cooled, crumbled bread crumbs to broth, soups and onions.

    Add 6 eggs and mix well. Cook at 350° until browned.
