Chicken and Lime Soup with Avocado

- 6 corn tortillas, juilienned
- 1 1/2 tsp vegetable oil
- 1 medium white onion, diced
- 8 clove garlic, chopped
- 4 boneless skinless chicken breast, thinly sliced
- 1 1/2 quart chicken broth
- 1/4 cup lime juice
- 1 tomato, seeded and diced
- 1 salt and pepper to taste
- 1/4 cup chopped cilantro plus extra for garnish
- 1 avocado, diced and tossed in a bit of lime or lemon juice
Directions

1Preheat oven to 400F.

2Baked tortilla strips until lightly browned and crispy, 3-5 minutes.

3In a large sauce pot cook onion and garlic in the oil until browned, 4-5 minutes.

4Add chicken, chicken broth, lime juice, tomato, salt and pepper.

5Gently simmer until chicken is fully cooked.

6Add cilantro and season to taste.

7Serve topped with avocado, cilantro and crispy tortilla stripes.

8I like a bit of extra fresh tomatoes as well.
