- 1 cup Quinoa, Rinsed And Drained
- 2 cups Chicken Broth
- 1 Tablespoon Extra Virgin Olive Oil
- 1/2 cups Chopped Sweet Onion
- 2 cloves Garlic, Minced
- 1 cup Frozen Sweet Peas
- 2 whole Cooked Chicken Breasts, Shredded
- 1 cup Spinach Leaves
- 1 whole Orange Bell Pepper, Chopped
Directions

1In a saucepan, combine the quinoa and chicken broth.

2Bring to a boil, reduce to simmer, cover and cook for 20 minutes.

3While the quinoa is cooking, heat the olive oil in a skillet over medium heat.

4Add the onion and garlic and cook until the onion is translucent, about 5 to 6 minutes.

5Add the peas, and continue cooking for another minute or two.

6Add the chicken and then the quinoa.

7Add the spinach and bell pepper, cooking for another minute or two.

8Serve immediately.
