  • 1 cup Quinoa, Rinsed And Drained
  • 2 cups Chicken Broth
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1/2 cups Chopped Sweet Onion
  • 2 cloves Garlic, Minced
  • 1 cup Frozen Sweet Peas
  • 2 whole Cooked Chicken Breasts, Shredded
  • 1 cup Spinach Leaves
  • 1 whole Orange Bell Pepper, Chopped

Directions

    In a saucepan, combine the quinoa and chicken broth.

    Bring to a boil, reduce to simmer, cover and cook for 20 minutes.

    While the quinoa is cooking, heat the olive oil in a skillet over medium heat.

    Add the onion and garlic and cook until the onion is translucent, about 5 to 6 minutes.

    Add the peas, and continue cooking for another minute or two.

    Add the chicken and then the quinoa.

    Add the spinach and bell pepper, cooking for another minute or two.

    Serve immediately.
