- 1 cup tomato, drained and chopped
- 1/2 red onion, minced
- 2 tsp garlic - minced
- 1 cup bell pepper - red or green

- 1/4 c cilantro, chopped
- 2 Tbs olive oil
- 3 Tbs lemon juice - fresh
- salt and pepper, to taste
