Ingredients

  • 1 uncooked chicken, cut into serving pieces
  • 1 c. rice (use Minute Rice)
  • 1/2 stick butter or margarine
  • 1 pkg. onion soup mix (Lipton's)
  • 1 envelope, shake well
  • 2 chicken bouillon cubes
  • 2 c. water

Directions

    Grease casserole or roasting pan (with a cover).

    Put rice over bottom.

    Thin slices of butter on rice (here and there). Chicken pieces next, salt and pepper, sprinkle onion soup mix over chicken.

    Dissolve bouillon cubes in two cups of hot water.

    Pour chicken over all.

    Bake covered at 350° for 1 1/4 hours.

    Rice should be moist, but now swimming in liquid.
