- 1 fryer, cut up, or 4 chicken breasts
- 1/2 stick butter
- 1 1/2 c. rice
- 1 1/2 tsp. salt
- 1/2 tsp. basil leaves
- 3 c. chicken broth or 3 bouillon cubes, dissolved in 3 c. water
Directions

1Preheat oven to 375°.

2Salt and pepper chicken; brown in butter.

3Put rice in a 3 to 4-quart covered casserole dish.

4Stir in salt and basil.

5Pour broth over rice.

6Lay chicken on top. Cover; bake at 375° for 1 hour, or until all liquid is absorbed. Let stand 15 minutes before serving.
