Ingredients

  • 2 lb. chicken breasts
  • 1 stick margarine
  • 2 cans cream of chicken soup
  • 1/2 can water
  • 3/4 c. raw rice (not Minute rice)
  • 1/3 c. diced celery
  • 1 tsp. instant onion
  • 4 oz. can mushrooms, drained
  • 2 tsp. cooking sherry (optional)
  • 1 c. grated cheese (optional)

Directions

    Take uncooked chicken off bones and cut into bite-size pieces. Salt and pepper.

    Melt margarine in skillet on low heat.

    Add all ingredients, except chicken.

    Pour into a 13 x 9 x 2-inch baking dish.

    Place chicken on top and push down with spatula.

    Bake at 350° for 30 minutes, uncovered.

    Cover with foil and bake 20 to 30 minutes longer.

    Add grated cheese, if desired.

    Heat just until melted.
