Ingredients
- 2 lb. chicken breasts
- 1 stick margarine
- 2 cans cream of chicken soup
- 1/2 can water
- 3/4 c. raw rice (not Minute rice)
- 1/3 c. diced celery
- 1 tsp. instant onion
- 4 oz. can mushrooms, drained
- 2 tsp. cooking sherry (optional)
- 1 c. grated cheese (optional)
Directions

1Take uncooked chicken off bones and cut into bite-size pieces. Salt and pepper.

2Melt margarine in skillet on low heat.

3Add all ingredients, except chicken.

4Pour into a 13 x 9 x 2-inch baking dish.

5Place chicken on top and push down with spatula.

6Bake at 350° for 30 minutes, uncovered.

7Cover with foil and bake 20 to 30 minutes longer.

8Add grated cheese, if desired.

9Heat just until melted.
