- 1 1/3 c. rice
- 1 1/2 c. chopped green peppers (bell)
- 3/4 c. sliced onions
- 3 Tbsp. oil
- 1/4 c. cornstarch
- 2 c. chicken stock
- 3 Tbsp. soy sauce
- 2 c. slivered chicken
- 3 ripe tomatoes, cut in thin wedges
Directions

1Prepare rice and keep warm.

2Meanwhile, cook green peppers and onions in heated oil in covered pan over low heat until tender, but not browned.

3Blend cornstarch with small amount of chicken stock and add remaining stock with soy sauce.

4Gently stir chicken into vegetables; cook and stir until sauce is clear and thickened.

5Add tomatoes.

6Serve over rice.
