Chicken And Rice Soup With Mint

Ingredients

  • 1 chicken large
  • 1 onion large, finely chopped
  • 8 cups chicken stock or water
  • 2 ounces basmati rice rinsed, drained
  • 1/3 cup lemon juice
  • 3 tablespoons fresh mint leaves shredded
  • bread to serve

Directions

    Place chicken, onion and 1 tsp salt in a large saucepan. Cover with stock. Simmer for 45-50 mins, until chicken is tender. Remove chicken. Let cool then cut flesh into thin strips.

    Add rice to stock. Simmer for 20 mins. Add chicken strips, lemon juice and mint. Serve with bread.
