Ingredients
- 1 lb. boneless, skinless chicken breasts
- 2 Tbsp. olive oil
- 2 to 3 Tbsp. flour
- 1 Tbsp. butter or margarine
- 10 oz. chicken broth
- 1/2 small onion, chopped
- 2 Tbsp. lemon juice
- 1/4 to 1/2 tsp. thyme
- 1/4 c. dry white wine (optional)
Directions

1Coat the chicken in 1 to 2 tablespoons flour.

2Brown for 5 minutes in 1 tablespoon oil.

3Turn and brown for another 5 minutes in the 2nd tablespoon oil.

4Remove chicken from pan.

5Add butter and chopped onion with the rest of the flour and cook for 2 to 3 minutes.

6Add chicken broth, lemon juice, thyme and wine.

7Stir until thickened and simmering.

8Add chicken and cook gently, covered, for 10 to 15 minutes.

9Good with rice.
